OSU Extension has tips for successful canning

It is time to get out the canning supplies and take inventory of your items. If you are using a pressure canner it is important to check your gasket in the canner, make sure you check for cracks and that it fits properly. When replacing, always use the model number for your pressure canner.

It is time to get out the canning supplies and take inventory of your items. If you are using a pressure canner it is important to check your gasket in the canner, make sure you check for cracks and that it fits properly. When replacing, always use the model number for your pressure canner.

It is important that you have your pressure gauge checked yearly. Gauges are tested free of charge at the McClain County OSU Extension Office. You will only need to bring the lid. Please call the office, 405-527-2174 for availability of date and time for testing.

Flats or lids are a one-time use product. They will still seal properly after 4-5 years if stored correctly. The lids should be stored in a cool, dry place. There are lids called Tatters that are reusable for 3 or 4 times, make sure to follow manufactures instructions for their use.

Check your jar rings/bands for rust and dents. Rings may be used over and over if they are free from rust spots or dents. If you find rust and dents, it is time to toss and replace.

Rusted or dented rings can be a cause for canned products not to seal properly. Proper care for rings/bands includes removing them for your cooled jars. Bands need to be washed and dried and stored in a cool place.

When canning, always use mason jars that have an embossed emblem on the jar. Always check your jars for cracks and chips, paying special attention to the rims and bottoms of the jars.

If you are using pectin in your preservation, it is usually good for 3-4 years or check the expiration date on the package.
